A Tasty Bean Lunch Recipe

I don’t really enjoy cooking but I do like to eat and I am am not a fan or ready made processed food. So I suck it up and prepare food from scratch every day.

This little concoction of beans is as tasty as it is healthy and I make a base which lasts me a few days and can be customized each day with whatever I have on hand.  It’s quick easy and requires very little washing up.


For the base

  • 1 can of chic peas
  • 1 can of black beans
  • Handful or roughly chopped cilantro (coriander)

Rinse and drain both the chickpeas and black bean and put in a large bowl with the cilantro

To assemble your salad take about a 1 cup scoop of you base and simply add some tasty bits. I added

  • Handful of chopped cucumber
  • Handful of blueberries
  • A few grape tomatoes
  • Salad dressing of your choice- I used vadalia onion
